Doing all parts with a 5 octave keyboard

What I do is have the pedal in the lowest octave playing on beats
1 and 3. The accompaniment is the 7 notes above that playing only
1 or 2 notes at a time on beats 2 and 4. The rest is the Solo.

Thanks for sharing. That is making good use of limited resources.

If you have an 88 note keyboard, you can go even further with this approach. Ben Model often uses a single 88 note keyboard plus 13 note pedalboard to control the Style 216 for silent movie accompaniment. The possibilities are limited only by your imagination.
